I have more than 100+ recipes pinned on my Pinterest Recipes Inspiration board.
They all sit there – as eye candy. The boards are usually full/ brimming with ideas but never are they implemented.I have really never attempted to make them.
I am sure that is the case of most of us who spend all our free time pinning. Doesn’t matter if its arts/crafts, style, home or food related.
Either the ingredients are never on hand or not in season or the process too complex.
So, I have decided to make one pinned recipe a month.
Starting with something simple and in season, I chose a Strawberry Rhubarb Lemonade. Non alcoholic, sweet and tart, the pink hued lemonade screams Spring. While I was out to drop Varun to pre-school, I bought rhubarb.I poached it in simple syrup. Squeezed lemons. And had a ruby red drink for the evening. It was so easy that I am making it again for a dear friend who is visiting from India.
Rhubarb Strawberry Lemonade Recipe
- 1 1/2 cups water
- 1 cup rhubarb chopped
- 1/2 cups strawberries quartered
- 1/2 teaspoon ginger root, grated
- 3/4 – 1 cup sugar
- 1/2 cup freshly squeezed lemon juice
- Boil rhubarb, 3/4 cup sugar, strawberries and ginger in water for 15 minutes till softened and in a mush. Strain it through a fine sieve, squeezing as much juice out of rhubarb and strawberries as possible using back of a spoon. Let it cool. Discard the pulp.
Add lemon juice to the rhubarb drink. Stir well.
Taste and adjust sugar according to sweetness preferred. Bottle and chill in refrigerator.
Serve chilled over ice.
